  • Activate the Lounge across dayparts to drive in-house capture and consistent guest traffic.
  • Analyze guest feedback and performance metrics to refine the experience.

  • Position beverage offerings as an experience through atmosphere, presentation, and narrative.
  • Lead menu rollouts through tastings, testing, and team collaboration to build ownership and excitement.
  • Manage beverage inventory, supplier relationships, cost control, and menu engineering.
  • Contribute to revenue and margin targets with strong commercial discipline.
  • Ensure full compliance with liquor regulations and responsible service standards.

Team Development

  • Recruit, mentor, and develop a confident, service-driven front-of-house and bar team.
  • Build a culture of continuous learning through tastings, product showcases, interactive training, and structured upselling techniques that enhance both guest experience and revenue performance.
  • Provide structured coaching and performance feedback to strengthen retention and growth.
  • Foster accountability, professionalism, and warm hospitality.

What You Bring

  • Proven ability to elevate service standards and build engaged teams.
  • Strong cocktail, wine, and spirits knowledge (WSET/ISG an asset).
